Roast
Beef
Sliders

​Ingredients
-
12 slider buns (let's be honest....Hawaiian sweet rolls are the right way to go!)
-
1/2 cup mayonnaise
-
2 tablespoons prepared horseradish (Our kids don't love this so we keep it off for them, but my husband loads it up for himself)
-
1 pound thinly sliced deli-style roast beef
-
6 slices sharp provolone cheese
-
4 tablespoons unsalted butter, melted
-
1/2 tablespoon packed light brown sugar
-
1 tablespoon Dijon mustard
-
2 teaspoons finely minced sweet onion (again... kid proof this one if needed)
-
1 tablespoon Worcestershire sauce (or as it's called in our house... Wash Your Sister Sauce)
-
1/2 teaspoon coarse salt
-
1 tablespoon poppy seeds
​Instructions
-
Preheat the oven to 350°F and grease a 9-by-13-inch baking dish.

Split the buns down the middle (keeping them intact if they came stuck together) and place them into the baking dish.
-
In a small bowl, mix together the mayonnaise and horseradish. Spread evenly on the bottom side of each bun, and then top with the roast beef, cheese, and top portions of the buns.

In a small saucepan over low heat, melt the butter and brown sugar together. Once the brown sugar has dissolved into the butter, remove the pan from heat and then whisk in the mustard, onion, Worcestershire, and salt.

Spoon the butter mixture over the sandwiches and then sprinkle them with the poppy seeds. Loosely cover the sliders with foil and bake for 10 minutes. Remove the foil, and continue to bake until the top buns are golden brown and the cheese has melted, about 8-10 more minutes. Serve warm.

OPTIONAL: Prepare a package of Au Jus mix for dipping.
Mississippi Pot Roast

Ingredients
1 Roast - We prefer chuck, but you can use whatever your heart fancies.
2 tablespoons - Minced Garlic (Follow your heart on this one).
1 Stick - Butter (Yep.. the whole thing)
1 Jar - Pepperoncinis or Banana Peppers
1 Package - Ranch Seasoning (dry mix)
1 Package - Au Jus Mix (can use Brown Gravy mix)
Instructions
We use crockpot liners.
You can sear off your roast if you like. We just put it into the pot as is.
Add your garlic, butter, the whole jar including juice of pepperoncinis, package of ranch, and package of Au Jus mix.
Set for 6-8 hours on low.
The longer it cooks the more tender it is.
Garlic Parmesan Chicken
Ingredients
3 - 4 - boneless, skinless, chicken breast
1 package - Cream Cheese
1 Jar - Garlic Parmesan Sauce (Buffalo Wild Wings brand)

You can use about 2 tablespoons of milk or heavy cream if you want to "wash out" the bottle to get every last bit of sauce.
-
You can top with grated or shredded parmesan.
Frozen Chicken

Kentucky Derby Pie

Ingredients

Pie Crust - I use Marie Callender's Pie Crust. It's the best in my opinion.
Filling
-
1 cup butter melted
-
½ cup granulated sugar
-
½ cup light brown sugar
-
2 eggs
-
2 tablespoons Kentucky bourbon
-
1 teaspoon vanilla extract
-
½ cup all-purpose flour
-
1 cup semi-sweet chocolate chips
-
½ cup chopped walnuts
-

Things we omit: Bourbon (because I can totally see my kids going to school saying they ate bourbon) and walnuts (because my husband hates them). I have eaten it with both of these and it is AMAZING. But you know... gotta keep the family happy.
Instructions​

Pre-Heat oven to 350 degrees.
-
Melt butter in a microwave safe dish.
-
In a large mixing bowl, add in sugars and mix well. I use my kitchen aid, but you could totally just whisk this all together and not have to pull out the big guns.

Add eggs, vanilla, bourbon, and flour, and whisk again until combined.
-
Fold in chocolate chips and walnuts. (If you aren't picturing David folding in cheese right now, I don't know that we can be friends).

Pour in your filling. (It's going to feel a little thick. Totally normal)
-
Bake at 350 degrees for 45 minutes or until your edges are set.
Chocolate Chip Cookies

​Ingredients

2 1/4 cups all-purpose flour
-
1 heaping teaspoon baking soda
-
1/2 teaspoon sea salt
-
8 tablespoons (1 stick) unsalted butter, at room temperature
-
2 cups packed light brown sugar
-
2 large eggs
-
1 1/2 teaspoons vanilla extract
-
1 -2 cups semisweet chocolate chips (add in with your heart)
​Instructions

Pre-heat to 350°F.
-
Mix together butter and brown sugar. I use a stand mixer because I sometimes double the recipe. Beat on medium-high speed until light and fluffy, 2 to 3 minutes. Add the eggs and beat until blended. Add the vanilla and beat until blended.

In a separate bowl add flour, baking soda, and salt. No need to sift.
-
Add the flour mixture to your butter and sugar. Mix lightly at first and then run it on medium for 2-3 minutes. From here you can either take the mixer off and FOLD IN the chocolate chips or add them and beat on high speed for just a quick minute to get them incorporate. I like to involve the kids and let them mix them in by hand.

These come out the best when you just drop a half a handful on the parchment paper. There's no need to roll or make perfect.

Bake until lightly browned on top, 10 to 11 minutes. You can underbake these for a really chewy cookie.

Makes around 40 or so cookies.
